Brand New Marine Cookery Bible is Out Now

The Marine Cookery Bible is a new book set to provide a comprehensive introduction and guide to the world of cooking on superyachts. The author, Malcolm Alder-Smith, or Malcy as he’s known to his students, has been training industry newcomers to work as interior crew for over five years.


“I was approached back in 2006 by Jon Ely, chief executive of UKSA, to design a one week marine cookery course to complement their existing marine hospitality programme. I hooked up with Emma Baggett (UKSA) and together we designed a course which has gone from strength-to-strength and is now recognised as a global lead product,” says Alder-Smith.


The 300-page Marine Cookery Bible provides a wealth of helpful information for both those new to the industry as well as more established chefs. Covering topics from what to expect onboard, to how much it costs to park a car in Antibes; from how to tackle personal insurance while working as crew, to the importance of managing your relationships with other crewmembers.

Keep this thoroughly-researched book close to hand as an invaluable reference on everything from provisioning to poisoning, cooking for different nationalities to cooking for crew, catering to special diets, keeping onboard practices environmentally sound, planning adaptable menus, finding work, networking and organising visas. Every conceivable gastronomic eventuality is covered, from making bread for breakfast to creating perfect seared scallops Niçoise. The closing sections of the book are particularly helpful for stews and deckhands that have found themselves in the galley; they hold a comprehensive run down of popular sauces and pastry varieties, plus a glossary of common culinary terms. Readers will also find a selection of cocktail recipes, a quick introduction to grape varieties, great food and wine pairings and an array of sample menus tailored to different cruising grounds.
