YPI Crew will once again be offering experienced yacht chefs an opportunity to undertake yacht-specific courses with Ducasse Education, the culinary training school of the famous chef, Alain Ducasse.
Following the success of the course in 2014, ‘Secrets of Culinary Excellence on an International Yacht’ returns to the French Riviera in 2015, between the 26th and 30th of October, where yacht chefs will train under the careful tutelage of one of Alain Ducasse’s elite chefs. As in past years, the training will take place on board the yacht White Rose of Drachs in Cap d’Ail.
Philippe Gollino, executive chef of Centre Formation d’Alain Ducasse (CFAD) explained, “Yacht chefs work for a select international clientele, who not only expect the best but demand excellence for every meal.”
The theme for this year’s series is ‘Techniques and Creativity for Outstanding Snacking’, and will incorporate two separate modules: Savoury and sweet. Chefs can enrol in one or both courses, however enrolment is due to close shortly and places are extremely limited.
The programme is aimed at experienced yacht chefs and crew who seek to enhance their culinary skills and food preparation skills to haute cuisine level.
According to YPI Crew, the training in culinary and pastry arts will consist of:
‘Savoury Snacking’, from 26th to 28th October, is an intensive three-day module upgrading the knowledge and techniques of yacht chefs, allowing them to stay ahead of contemporary snack trends. Using seasonal, natural and authentic ingredients, students will learn to prepare, cook and plate gourmet and innovative snacks with the creative touch of Alain Ducasse. Course cost: €1,630 excluding VAT.
‘Sweet Snacking’, from 29th to 30th October, is a two-day course in the prestigious dessert, pastries and sweet snacks that Alain Ducasse is so famous for. Including sweet preparation, petit fours and finger food, these beautiful and delicious desserts will add an exceptional flair to a yacht chef’s repertoire.
The ‘Secrets of Culinary Excellence on an International Yacht’ series allows yacht chefs to be trained by Ducasse Education in a format and style specifically tailored to the yachting industry.
